Black aam papad Recipe

Ingredients

  • ​1 kg raw mangoes, peeled & grated
  • 3/4 cup (150 ml) water 
  • 150 grams sugar
  • 1/2 tsp kala namak (black salt)
  • 2 tsp chat masala
  • a few tsp of desi ghee (clarified butter)

How To Make Khatta Meetha Chatpata Aam Papad

  1. put grated mango in a pot. add water& stir. cover & cook on low heat till soft (should take about 5-6 minutes)
  2. allow to cool and then puree them in a blender to a smooth paste
  3. strain out the puree & keep on low heat to cook
  4. add sugar and mix well. raise heat to medium/low medium & cook till all the added water dries up & puree becomes thick. do a plate test if needed
  5. put off heat .add the chat masala and black salt. mix well & immediately pour in greased plates
  6. allow to dry under fan for 2-3 days till completely dry
  7. cut into desired shapes & sizes
