Mixed Vegetable Pickle Recipe

Pickle or chutney laid on the table during meals increases hunger as well as the food’s taste. There are numerous types of pickles which are made in different ways. Some pickles have a shelf life up to 1-2 years while some are made according to the ongoing season and are eaten in 20-25 days. This winters you can make a mixed pickle comprising cauliflowers, carrots, peas, beans, turnip etc and have it with your meals. Choose the vegetables that you like to prepare this pickle. Ist Recipe to Make Punjabi Style mix pickle
Ingredients for Punjabi mix pickle
- 1 kilo – cauliflower
- 1/2 kilo – carrot
- 1/2 kilo – green peas
- 200 gms – ginger
- 25 gms – green chillies
- For Masala:
- 1/2 cup – mustard seeds
- 1 tbsp – chilli powder
- 1/2 tsp – garam masala (optional)
- salt to taste
- To Temper:
- 2 tbsp – refined or til oil
- 1 pinch asafetida
How to Make Mix Pickle |Punjabi
- Make large pieces of cauliflower and carrot pieces of about one inch.
- Remove peas from the pods.
- Slice the ginger into thin chips.
- Vertically cut chillies into two and remove the seeds to extent possible.
- For tempering heat oil in kadai, add asafetida, put the chilli slits first, saute for a while and then add all the cut vegetables.
- Continue stirring on a low flame.
- Grind the mustard seeds and mix with the other masalas.
- Add all the masalas to the half cooked vegetables.
- Switch off the heat after a few minutes.
- Allow to cool before filling up in a jar.
- Stir the pickle everyday.
- The pickle is ready to eat after about 8 days.
- In the meanwhile keep stirring once everyday.
2nd Recipe to Make Andra Style mix pickle
Ingreditents for Mixed Vegetable Pickle | Andra style
- Cauliflower – 500 grams ( 2 1/2 cup cut in pieces)
- Carrot – 500 grams(2 1/2 cup cut in pieces)
- Peas/Turnip – 200 grams ( 1 cup)
- Heeng (asafoetida) – as much as 1 pea
- Mustard oil – 100 grams ( 1/2 cup )
- Yellow mustard – 2 tbsp (grounded)
- Turmeric powder – 1 tsp
- Red chilly powder – 1 tsp
- Vinegar – 1 tbsp (juice of 2 lemons)
- Salt – add to taste ( 2 1/2 tsp)
How to make Mixed Vegetable Pickle |Andra style
Cut cauliflower into big pieces(heat water and add 1 tsp salt). Put the pieces in this water, cover and keep aside for 10-15 minutes. Wash, peel and wash carrots again. Cut carrots in 2 inch long, thin strips.
Heat water enough to submerge all the vegetables in a utensil. Put all the vegetable pieces in boiling water, boil for 3-4 minutes, then cover and keep for 5 minutes.
Strain the water from the vegetable with a strainer. Dry the vegetables on a washed thick cloth for 4-5 hours in the sun.
When all the water has dried up then put the vegetables in a big bowl, add yellow mustard, salt, red chilly powder, oil and Heeng(crushed) then mix properly. Also mix vinegar or lemon juice.
Fill the pickle in adry glass or plastic container. Stir the pickle once in 2 days. The pickle will turn sour and tasty in 3-4 days.
Cauliflower, carrot, peas Mixed Vegetable Pickle is ready. Take it out from the container whenever you want to eat. This pickle can be stored up to a month. If you want to increase it’s shelf life then keep pickle in the fridge or put oil enough to completely submerge the pickle.
